You\u2019ve already finished all your books, and Netflix now knows what you like better than your own partner does. It\u2019s well and truly time for a bit of variety in your day! So why don\u2019t you try baking some bread? Here\u2019s a recipe for our delicious bread that\u2019s perfect for the mountains!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-bread-that-s-very-funny\">Bread? That\u2019s very funny!<\/h2>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignright\"><a href=\"https:\/\/www.bergfreunde.de\/blog\/wp-content\/uploads\/2021\/05\/Bergfreunde-Brot-Baecker3.jpg\"><img decoding=\"async\" src=\"https:\/\/www.bergfreunde.de\/blog\/wp-content\/uploads\/2021\/05\/Bergfreunde-Brot-Baecker3-300x225.jpg\" alt=\"\" class=\"wp-image-43467\"\/><\/a><figcaption class=\"wp-element-caption\">Our master bakers Hannes and Robert<\/figcaption><\/figure>\n<\/div>\n\n\n<p>Yes, yes, we know what\u2019s going through your head right now: Yeast and flour &#8211; where am I supposed to get those? A little tip: go to your <strong>local bakery<\/strong> and ask them for some. Most bakers have enough of both and will be glad of the extra income. But always keep the appropriate distance away from them! Otherwise, you could just <a href=\"https:\/\/www.theverge.com\/2020\/3\/31\/21199708\/yeast-diy-baking-covid-19-shortage-make-it-yourself-bread\"><strong>make the yeast yourself<\/strong><\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-our-extreme-spelt-mountain-bread-the-recipe\">Our \u201cExtreme Spelt\u201d mountain bread: The recipe!<\/h2>\n\n\n\n<p>Before you can really get going in the home bakery, of course you need a few ingredients. For the mountain bread, you need the following:<\/p>\n\n\n\n<p><strong>Ingredients (for one 750 g loaf)<\/strong><\/p>\n\n\n\n<p><strong>Water roux<\/strong>:<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignright\"><a href=\"https:\/\/www.bergfreunde.de\/blog\/wp-content\/uploads\/2021\/05\/Bergfreunde-Brot-Krume.jpg\"><img decoding=\"async\" src=\"https:\/\/www.bergfreunde.de\/blog\/wp-content\/uploads\/2021\/05\/Bergfreunde-Brot-Krume-300x225.jpg\" alt=\"\" class=\"wp-image-43468\"\/><\/a><figcaption class=\"wp-element-caption\">Take your time preparing it and you\u2019ll be rewarded with a beautiful crumb.<\/figcaption><\/figure>\n<\/div>\n\n\n<p>90 g spelt flour (type 630)<\/p>\n\n\n\n<p><strong>Main dough<\/strong>:<br>350 g spelt flour (type 630)<br>90 g sunflower seeds<br>13 g salt<br>10 g yeast<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-method\">Method<\/h3>\n\n\n\n<h3 class=\"wp-block-heading\">Water roux<\/h3>\n\n\n\n<p>For the <strong>water roux<\/strong> (sometimes also referred to as tangzhong), simply bring 245 g of water to the boil. Remove the pot from the stove. Add the <strong>spelt flour<\/strong> and\u00a0whisk it in quickly. Leave the mixture, covered, to cool <strong>overnight<\/strong>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Main dough<\/h3>\n\n\n\n<p>For the <strong>main dough<\/strong>, place the water roux together with the other ingredients and 140 g of cold water in a <strong>mixing bowl<\/strong> (preferably in a food processor &#8211; otherwise, for the climbers amongst us, you can get a really good upper arm workout at the same time. Knead well for 10 minutes. If you\u2019re doing it by hand,\u00a0it may take a little longer.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignright\"><a href=\"https:\/\/www.bergfreunde.de\/blog\/wp-content\/uploads\/2021\/05\/Bergfreunde-Brot-Ofen.jpg\"><img decoding=\"async\" src=\"https:\/\/www.bergfreunde.de\/blog\/wp-content\/uploads\/2021\/05\/Bergfreunde-Brot-Ofen-300x225.jpg\" alt=\"\" class=\"wp-image-43464\"\/><\/a><figcaption class=\"wp-element-caption\">The bread takes a bit longer, but it\u2019s worth it!<\/figcaption><\/figure>\n<\/div>\n\n\n<h3 class=\"wp-block-heading\">Resting &amp; proving<\/h3>\n\n\n\n<p>Cover the dough and leave it to rest for <strong>two hours at room temperature<\/strong>,\u00a0<strong>folding the dough once every 30 minutes.<\/strong>\u00a0Finally, leave the covered dough to prove overnight in the refrigerator.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Warm up, preheat &amp; bake<\/h3>\n\n\n\n<p>The next day, take the dough out of the fridge and allow it to come to room temperature for two hours. After another one and a half hours, preheat the <strong>oven using the top and bottom heating elements to 260 degrees Celsius<\/strong>.<\/p>\n\n\n\n<p>If you have a <strong>pizza stone<\/strong>, feel free to pop it into the oven! Otherwise, it\u2019s also fine to use a normal baking tray. After the dough has warmed up, use wet hands (with cold water since the dough is really moist) to form the dough into a <strong>nice ball.<\/strong><\/p>\n\n\n\n<p>From there, lay it on baking paper and allow the dough to <strong>relax for another ten minutes<\/strong>.<\/p>\n\n\n\n<p>And now it\u2019s time to bake it! Put the baking tray on the lowest rack and&nbsp;ladle a little water into the oven. Then close the oven immediately! This process, known as&nbsp;\u201csteaming,\u201d ensures a great crust. Set your timer for 60-70 minutes. <strong>After 10 minutes,&nbsp;<\/strong>reduce the temperature to <strong>210 degrees Celsius.<\/strong><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignright\"><a href=\"https:\/\/www.bergfreunde.de\/blog\/wp-content\/uploads\/2021\/05\/Bergfreunde-Brot-Baecker.jpg\"><img decoding=\"async\" src=\"https:\/\/www.bergfreunde.de\/blog\/wp-content\/uploads\/2021\/05\/Bergfreunde-Brot-Baecker-300x225.jpg\" alt=\"\" class=\"wp-image-43466\"\/><\/a><figcaption class=\"wp-element-caption\">If all goes according to plan, the bread will end up looking like it came from a bakery!<\/figcaption><\/figure>\n<\/div>\n\n\n<p>Your entire apartment will slowly start to smell of fresh bread. Everything is as it should be.<\/p>\n\n\n\n<p>Once the timer goes off, take the bread out of the oven and <strong>check<\/strong> that it has <strong>baked all the way through<\/strong>.&nbsp;Finally, use a pastry brush to brush a little <strong>water<\/strong> on the crust.<\/p>\n\n\n\n<p>And now you have a super delicious loaf of bread. It may take a little longer than usual to prepare, but it\u2019s worth it. We\u2019ve sure got enough time at the moment! If you want to stock up on bread, you can definitely bake several loaves and then <strong>freeze them in a freezer bag.<\/strong><\/p>\n\n\n\n<p><strong>Serving suggestions<\/strong>: after it has cooled down, cut right into it &#8211; it\u2019s a dream just with butter alone!
